I have been trying to use more beans and legumes in our cooking. I like the convienience of canned beans but not the price. There is a chili cook-off at the end of the month so I want to make the chili now. I really like vegetarian chili or a great chili with steak (stew meat). I think this will be vegetarian. I also want to make
tortilla pie. I've never made this recipe the same way twice and never as simple as the original either. So many options. I think version has carrots, mushrooms, beef, chicken, zucchini and a whole lot of other spices/herbs. I'm getting hungry just writing about this. We've haven't had this in a long while.

I'll soak these overnight and then see how we are doing. I am also going to sprout the mung beans to eat. YUM!

I have been trying to do the same thing. My neighbor doesn't soak her beans she just sticks them in a crock-pot on low for 8 hours. Haven't tried it yet, might today though.
